For a 7-8 lb Country Whole Smoked Ham Bone-in

Cooking Liquid

  • ½ cup brown sugar
  • ¾ cup Honey bee
  • 2 oz honey Dijon mustard
  • 1 ½ tablespoons Brocmar Smokehouse Country Candy
  • 1 ½ cup chicken stock

Bourbon Glaze

  • 1 cup Brown Sugar
  • 4 tablespoons ham liquid from after cooked
  • 2 tsp Country Candy
  • 1 tablespoon Molasses
  • 1 ½ teaspoon Black pepper
  • ¼½ cup 2 year Hidden Still David E Bourbon
  • Pinch of cinnamon

Instructions

  1. Preheat your smoker to 240 degrees. (Recommended smoker is a reverse flow wood burner but a pellet / charcoal / Kettle or electric will work just fine.) 
  2. Prepare the ham by cutting diamond shape pattern into the skin of the ham. Try and go ¼” deep but try not to go so deep that you penetrate the skin and cut into the meat.
  3. In a bowl combine brown sugar, Honey bee, mustard, ½ the country candy and chicken stock. Mix thoroughly
  4. Place in cast iron pan and pour cooking liquid over ham. Take the rest of the country candy and sprinkle over the top.
  5. Place the cast iron pan and ham in the smoker at 240 degrees or about 4 hours or till internal temperature hits 155-165 degrees.
  6. Remove the ham from the smoker and let it rest.
  7. For Glaze Combine brown sugar, Hot ham liquid, Country Candy, Molasses, Bourbon, cinnamon and black pepper in small sauce pan.
  8. Bring glaze mixture to a simmer. Whisk all ingredients thoroughly till combined. Be careful whiling cooking for bourbon might ignite.
  9. Place ham on serving platter and pour bourbon glaze over the ham and your ready to eat

Notes

Want to add special touch! We recommend that before you apply the bourbon glaze. Mix into the glaze your choice of whole pecans, sliced peaches or premium pitted cherries. Oh yes!! Yum
